How to Prepare Your Kitchen Before a New Season Arrives

Spring is not the only season when you should clean, especially when it comes to the kitchen. Every season brings its own beauties and new flavors on the table. For example Summer – fresh veggies, fruits, Fall – pies, stews, roasting, and so on. Think of every season as a chance to get your kitchen into shape.

Why preparing the kitchen is a good thing? If you wait for spring to come to clean it you will end up throwing a lot of food. If you do this every 3-4 months you will check on expiration dates sooner and you will save some food from going bad. Plus, if you love to cook it will be easier if everything is organized and the pantry is stocked with all essentials.

So, let’s get started!

1st Step is to clean the Pantry

I know that this is time-consuming so the easiest way is to get everything on the table. Group everything, like with like. When you do this you will see that you actually have a lot of space in the pantry. Write down the groups and write what is missing. Check the products to see the expiration date. Make it your priority to use the ones who are about to expire and throw the expired ones.

2nd Step is to wipe the shelves

Don’t be surprised if you find, flour, rice grains, etc in the pantry. Now you want to clean that so when you restock you can place them on a clean surface. For cleaning don’t use hard chemicals. You can use a damp sponge or cloth. When finished use safe disinfectant.

3rd Step Writing the Pantry list

Ok, you have a list for what is missing. But here is better way to write it. Think about bags, boxes, tins hand cans that you can use to make lunch/dinner/breakfast from “nothing”. Print or write down and tape the plan  where is convenient for you (like the inside of the cabinet door)

Now, it is time to do the same thing with your fridge. Take out everything, check the food in groups, write down what is missing. Throw everything that is not edible anymore. Clean the refrigerator with a vinegar-water solution. Make a list of foods that you stock your fridge d with and place it on the door fridge.

Meal plans not only makes cooking, shopping, and planning easier but also can help you eat in-season food only. Make a meal plan for 2 weeks. It is just enough to always have something different on your table.

Clean the stove well. Starting from the cooktop to the oven. Don’t forget the knobs and other smaller parts. With this, your food will never smell bad and you won’t spend money on constant repairs. Stoves can easily start to malfunction if they are not cleaned regularly.

I, personally, would add this to the reasons to avoid a restaurant. If owners feel they need to beg for patrons then they don’t need to be open. If the tables, floors, bathrooms and other public areas are dirty or unkempt then the kitchen is likely following trend.

4. Children love to feel wanted and they love to help out. For example, my son likes to help me clean up at the end of the day. So, when I run the vacuum to clean the floors, he will find and turn on his toy vacuum to ”help” me clean the house. He also likes to help me cook in the kitchen. It makes him feel important and needed.

1. What do kids love more than sugary treats? Probably not much! So a great food to make with then is something sweet that they can decorate themselves. For example, Christmas cookies, cupcakes, or donuts!

2. Not everything they cook and eat should be sugary. They need to find healthy foods that they enjoy to keep their bodies growing big and strong! Making a veggie pizza from scratch can be fun for them. They will love the idea of having pizza for dinner and if you have more than one child you may consider making individual mini pizzas so everyone can have the veggies and toppings they want!

1. Make sure everyone washes their hands! It is critical that they learn this step early on. Hands are one of the main transportation devices of germs and if germs are spread to the utensils and food then people can end up getting very sick.

2. Once everyone has clean hands you should gather all required ingredients to make the desired recipe.

3. If your children are shorter than the counter then you may want to find a stepping ladder or stool for them to stand on. Make sure it is level and stable before they climb aboard.

4. Keep dangerous knives and utensils out of their reach until they are old enough to handle them. Safe utensils include wooden spoons, spatulas and rolling pins.

5. If raw meat is involved make sure great care is taken to handle the meat yourself and assign a different, safer task for the children to help with.

Caramel Apples – The Best Dessert and Snack for This Fall

Apples are the first fruit that comes to our mind when we think of fall. They are very healthy fruits and they come in so many different varieties. But as a fruit, they really can be used to make different meals and desserts. The meat is tastier when cooked with apples and the sauce is mouthwatering. The apple pies, muffins, etc. are also the signature dishes of Fall. But, wait there is one that many enjoy is Apples dipped in Caramel. I am going to share the best recipe for you so that you can enjoy a true Caramel Apple whenever you like.

Simple Caramel Apple Recipe

Prep: 20min Cook: 1h Total Time: 1h 20min Servings: 5 apples

Ingredients:

  • 5 apples, chilled
  • 2 tbsp. of Water
  • 1 package of Caramels

Directions:

1. First, refrigerate the apples until cool. Then wash the apples and dry them well. This is a very important step. If you skip the caramel won’t stick to the apples.

2. Insert a wooden stick in the steam and reach the other end.

3. In a bowl combine the water and caramels. Microwave for about 2 minutes, until melted. Stir well.

4. Place a parchment paper on a large plate. Spray with oil.

5. Deep each apple, one at a time in the sauce. Turn to coat well. Hold the dipped apples over the bowl and let the excess to drip back.

6. Refrigerate until the caramel becomes firm, about 1 hour. Remove from the fridge for 15 minutes before you serve them.

Note: refrigerate the apples up to 2 days.

If you are expecting guests make sure to make plenty because they won’t be able to resist them. You can even decorate with some sprinkles and add flavors in the caramel-like cinnamon, rum, etc.. Experiment with the sauce but keep the ratio the same so that the caramel apples always come out perfectly.

3 Insane Ways Restaurants Mess With Food Critics

My time as a food critic in the New Jersey/New York area has led me to see some seriously wild stuff behind the scenes of the restaurant industry. I’ve dealt with racist restaurateurs, shouting chefs, as well as foods that probably should never have hit a plate.

Through my years, I’ve learned that restaurants aren’t always honest with critics. In fact, they can be downright shady when it comes to the ways they try to gain favor with the foodie community. These methods below are ones I’ve personally witnessed as a critic. If nothing else, I hope this tell-all makes you think twice about those glowing reviews.

Bribery

I would like to say that bribery is rare in the critiquing industry, but it really isn’t. Restaurants have been known to buy positive revies way before the days of Yelp. Sometimes, they even pay magazines to run glowing reviews, just so they can boost their reputation.

It’s scary how many upscale restaurants are guilty of this, and how many magazines allow it. For example, New York City restaurant Nello made headlines in the past after it was revealed that owners paid $1,400 for a good review by a major food critic.

Bribery

I’d like to say this is a one-off, but it’s not. I’ve been offered $600 from a chef in exchange for a good review. (I denied it, if you’re wondering.)

The Old Switcharoo

One time, I had a restaurant that I was scheduled to review. It was a barbecue joint that promised world class meats and the best brisket on the Hudson. When I went in, I was thrilled with the food. You could actually see the smoke rings on the brisket, and every cut of meat was clearly prime.

After I had one of the best meals of my life, I immediately decided to go back. That was when reality hit. I went without announcement with my family. My dad was a Texan, and he knew his meat. When we got out food, it looked nothing like what I ate the month before.

The meat had no smoke rings, the cuts were cheap, and it was clear that I was not served what everyone else was eating at my review. I was heartbroken. Sadly, I’ve recognized that this was really not uncommon later on.

Booze Up

Another time I went out, the venue got wind that I was a critic. So, they offered me a free drink. And another. And another. And another. After drink number four or so, I tried to decline, only to find myself to be pressured to drink more. Suddenly, every drink was a “house drink everyone has to try.”

I don’t know how, but I ended up getting notes to do the review despite having over a dozen drinks in me. I had to be wheeled into my car, where a designated driver took me home. When I woke up the next day, I realized what the restaurant did. They were making me black out so I couldn’t actually remember what I ate, or notice what happened!

The Importance of Going Incognito

After seeing how far restaurants would go to get a good review, I stopped letting people know when I’d critique their venue. The end result? I got more honest reviews and was able to avoid dirty tactics. Thankfully, it’s been a while since people have tried to pull dirty tricks with me. I, for one, am glad about it.

Americanized Chinese food vs. Authentic Chinese Food

I hate to break the news to anyone that enjoys Chinese food takeout as much as I do, but the chances of that takeout resembling authentic food from China is rather slim. Chinese takeout that we have come to know and love is generally Americanized or Westernized versions of authentic Chinese food.

The Cooking Methods Much of the Americanized or Westernized Chinese food takeout is fried. That is a very uncommon cooking method in China. Very few of their authentic dishes involve frying any of the meats or vegetables. Typically, the Chinese rely on steaming, braising, boiling and other healthier cooking options compared to deep frying. Some dishes at Chinese takeout restaurants can be made either fried ​or ​ steamed, such as dumplings. Most menus will list both options and leave it up to the customers to order the cooking method they prefer.

Types of Chinese dishes

There are many dishes on the takeout menu that come with sauces on the side or are even smothered in sauce. Sauces are not common in authentic Chinese cuisine as they prefer spices and herbs to add flavor. These dishes include sweet and sour chicken, orange chicken, or General Tso’s. In fact, these dishes are in no way authentic to the dishes you would find in China.

Meals in China are also not primarily focused on meat as the star of the plate. Primarily, they plan their meals around vegetables, noodles, and rice. In fact, tofu can often be found in their dishes to boost the protein factor. This is not to say that the authentic Chinese dishes do not include meat at all. They simply include it substantially less than we do here in America.

Traditional Chinese dishes will likely include soy sauce, noodles, cabbage, pork, tofu, and much more! Dumplings, while made and served in American Chinese restaurants, they are an authentic dish in China, as well. You may also consider trying Spinach Noodles, Mutton Stew or Fried Mashi.

Spinach noodles are named accordingly! They are noodles that are actually made from spinach and then combined with spicy sauce, carrots, beef, potatoes, chili and egg.

Dumplings are an incredible Chinese meal even though they are often seen as an appetizer. They can be stuffed with pork, vegetables, or beef. As previously mentioned, dumplings can be made steamed or fried. Either cooking option is ridiculously tasty! The choice is yours whether you want a crunchy or a soft outer dumpling.

Fried Mashi is a bit of a sweeter dish. The Mashi is very similar to gnocchi in look, softness, and thickness. The dish often includes vegetables with a crunchy texture. The dish is composed of completely complimentary ingredients and is a must-try!

The Mutton Stew is a very traditional Chinese meal. The stew can be made with pork, beef or mutton. It also comes with bread, chili sauce, and pickled garlic as a side dish.

Of course, you cannot forget about fish! Fish is a common meat found in Chinese meals. They can be cooked or raw just as they can be in the United States. There is a fish dish called Kuai. This cuisine consists of raw fish (or other meats) that are cut into thin strips. This particular Chinese dish does involve sauces as a must in order for Kuai to be edible. These sauces are typically made in one of two ways; with scallions in the Spring or with mustard seed in the Fall.

Hong Kong Kitchen

Located on Pine Avenue in Niagara Falls, NY, the Hong Kong Kitchen is my absolute favorite Americanized Chinese restaurant in my area. Without a doubt, I have to say that their dumplings are mouthwatering and then put over the top with the sauce on the side. I generally order them steamed as I prefer the pillow-like texture and it is a little healthier than the fried option. The wonton soup is another one of my favorite menu options because their wontons are delicately homemade and out of this world with flavor!

Chinese food for me is something that I would happily eat every single day if the end result did land me living in a cardboard box and weigh 200+ pounds. Yes, the Chinese food here in the United States is westernized but it is unquestionably delicious!
